Once a has been created and set to run everyday at a specified time I see no way to alter that time once run? The "schedule" is greyed out?

Can you provide some details? Screenshot maybe? I do not understand what you mean.

I have the same problem. I added a https , one zip with the same name both source as target on a daily schedule, set to start at 10 and end at 23:59. The schedule ran once, not daily. At least the target file was not replaced as I would have expected. If I right-click on the task, the option 'schedule' is greyed out.
